Our Bunka is hand-forged in Tosa, Japan, from SK4 high carbon steel, a steel prized for its exceptional sharpness, durability, and ability to hold a fine edge through years of use.

THE BLADE

A Bunka (bunka bōchō) is a versatile Japanese kitchen knife designed as an all-purpose knife for home and professional cooks. The word "bunka" means "culture" in Japanese, reflecting its role as a knife suitable for a wide variety of food preparation.

Hand Forged in Tosa from SK4 carbon steel and hardened to HRC 62, this blade offers impressive edge retention and performance. As with all high carbon steel knives, it will naturally develop a patina over time, a mark of use that many owners come to appreciate. 

Just be sure to dry it after every use, as prolonged exposure to moisture can cause rust.

The blade is finished with a traditional Blacksmiths Kurouchi finish, a dark protective layer that highlights the knife's forged character while reflecting generations of Japanese blacksmithing expertise. The makers mark is hand stamped on the blade in Kanji.

THE HANDLE

The handle is where this knife becomes something truly special.

Made by us here in Scotland, each handle begins life as discarded fish boxes collected through our Scottish Harbour Collection Programme. The plastic is recovered, cleaned, shredded, and remoulded into a durable handle with a distinctive marbled finish.

The result is simple: no two knives are ever the same.

Presented in a gift box and wrapped in traditional Japanese newspaper,
